blueberry oatmeal cookies


Blueberries are my favourite fruit and I will drop them in a recipe whenever I can. Today they made their way into this oatmeal cookie recipe. I’m trying to keep things on the lighter side this summer so instead of butter I substituted with mashed banana. They baked up great and delicious.

What you need:

1/2 cup ripened mashed banana
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups quick oats
1 1/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup fresh blueberries

What you do:

Preheat oven to 350 degrees.

Lightly grease cookie sheets or line with parchment paper.

In a bowl mix well, mashed banana and brown sugar. Beat in the egg and vanilla. In a separate bowl, combine oats, flour, cinnamon, salt, baking soda and baking powder. Gradually add to the banana mixture. Stir in blueberries.

Drop batter by the tablespoonfuls, about 2 inches apart, onto prepared sheets.  Bake for 12-14 minutes or until golden. Remove cookies to wire racks to cool.

Makes about 34 cookies.
