Julia’s fall recipe of choice this week is Pumpkin, Walnuts and White Chocolate Muffins. These muffins are chock-full of pumpkin flavour and bursting with scrumptious, especially if your sweet tooth is calling!

What you need:
1/2 cup walnuts, chopped
1 2/3 cup all-purpose flour
1 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup pumpkin puree
1 teaspoon vanilla extract
1/2 cup unsalted butter, melted
2/3 cup white chocolate chips
What you do:
Preheat oven to 350 degrees F.
Grease or paper cup line muffin baking pan.
In a large bowl mix together, flour, sugar, spices, baking soda, baking powder and salt.
In a separate bowl mix together, eggs, vanilla, pumpkin, and butter. Stir in the walnuts and chocolate chips.
Combine the wet and dry ingredients and mix until the dry ingredients are moistened. Do not over mix.
Scoop batter into prepared muffin cups. Bake for approximately 20-22 minutes or until puffed and springy to the touch. Let cool before removing from cups.
Makes 12 fabulous muffins.
