I love desserts that are super simple but don’t sacrifice on decadence and this recipe delivers. Okay, I have to confess the brownie is actually a box mix… a tiny bit of a cheat, but who doesn’t surrender to these short cuts once in a while? I call this pumpkin brownie delicious-ness!
What you need:
1 box of chocolate brownie mix
125 grams of cream cheese, room temperature
1/2 cup pumpkin puree
Pinch each of cinnamon, nutmeg, cloves, allspice
What you do:
Prepare brownie batter according to package directions. Pour batter into baking pan but don’t bake yet. Set batter aside.
In a bowl, using a wooden spoon or spatula, mix together cream cheese, pumpkin puree, egg and spices. Use a hand mixer to beat out any lumps.
Pour pumpkin mixture on top of brownie batter. Use a knife to swirl pumpkin mixture into brownie batter.
Bake according to brownie package directions. Keep in mind you may have to bake longer because of the addition of the pumpkin mixture. For example my brownie package said to bake for 25 minutes, but I ended up having to bake them for about 40 minutes.
When brownies are done, let cool completely before cutting into squares.
