stuffed zucchini

Here’s another great recipe from the cookbook that Julia and Jamie put together for me. If you’re looking for something a little different to serve as a side, this recipe will surely fill the bill!!

What you need:

2 zucchini.* I used 4 zucchini and doubled the recipe except for the onion.
1 onion, chopped
1/2 tomato, chopped
1 tablespoon sour cream
1/4 to 1/2 teaspoon salt.* I very rarely use salt so I omitted.
1/4 teaspoon curry powder
1 teaspoon thyme.* I didn’t have thyme so I used a combination of dried basil and oregano.
Grated cheese.* I used parmesan.
dash of pepper

What you do:

Preheat oven to 425 degrees.

Cut zucchini in half length-wise and scoop out the pulp. Place the hollowed zucchini in a shallow baking dish. Chop up the pulp and set aside. Saute onion until browned. When the onion is almost done add in the curry powder and cook for another 30 seconds (no longer or curry will turn bitter). Transfer onion to a large bowl and add pulp, chopped tomato, sour cream, salt, thyme and pepper. Stir to combine. Scoop mixture into the zucchini and top with grated cheese.

Cook for 20 minutes and then broil to crisp up the top.

Sprinkle with parsley (optional).

Serve and enjoy!
