peanut butter oatmeal chocolate chip cookies

After spending an entire Saturday morning running around town doing errands I was so wanting a warm, freshly baked cookie! Got home and pulled out my recipe binder, which really needs to be categorized (one of these days I’ll get around to it- LOL!) and came across a recipe for peanut butter cookies. I’ve had this recipe for so long I can’t even tell you where it came from. Anyway, if you’re anything like me, peanut butter and chocolate combos are an absolute favourite. So….of course, in went chocolate chips. Oh, I added oatmeal as well. The cookies were a real hit around here and were on the table for dessert tonight. I hope you like them too!

What you need:

1/2 cup butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1 teaspoon vanilla
1-1/2 cups flour
1 cup Quaker oats, large flaked
1 teaspoon baking soda
1 cup chocolate chips

What you do:

Preheat oven to 350 degrees.

Beat butter and sugars until light and fluffy. Blend in peanut butter. Mix in egg and vanilla until well blended. Stir together flour, oats and baking soda; mix into peanut butter mixture until well blended. Fold in chocolate chips.

Line cookie sheet with parchment paper. Using a tablespoon, place dough 1-1/2 inches apart.

Bake for 9 to 12 minutes or until lightly brown.

Makes approximately 4 dozen.
