pumpkin spice latte and hot apple cider with pumkin spice syrup

When fall rolls into town I do crave the comfort of wrapping my hands around a warm mug. And of course this time of year, froth and spice = comfort and warmth too! So brewing in the kitchen today were two frothy drinks, Pumpkin Spice Latte and Hot Apple Cider with Pumpkin Spice Syrup. They were both a delicious compliment to a chilly fall day!

To make the pumpkin spice syrup

What you need:

1/3 cup pumpkin puree (fresh or canned)
1 cup sugar
1/2 teaspoon vanilla
1 1/4 cups water
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon ground ginger

What you do:

Combine all ingredients in a saucepan and bring to a boil over medium heat. Stir occasionally to keep syrup from burning. Allow mixture to cook until it becomes syrup-y and begins to coat the spoon (10-15 minutes should do it.) Remove from heat. Refrigerate the syrup in a heat-proof container. It will thicken a bit in the refrigerator, but will become syrup-y again when it’s heated.

To make the whipped cream topping (makes 2 mugs)

what you need:
1 cup of whipping cream
dash of vanilla
cinnamon and sugar to taste

what you do:
In a medium bowl add all the ingredients. Beat on high with a hand mixer until stiff peaks form (about 5-7 minutes). If you overbeat and are left with “whipped butter” stir in additional whipping cream until desired consistancy.

To make the pumpkin spice latte, heat syrup with milk (approximately 2-3 tablespoons of syrup and 2 cups of milk, depending on how much milk you want to use and how pumpkin-y tasting you want your latte). I used about 3 tablespoons syrup. Whisk until frothy for about ten seconds to make it thicken and prevent the pumpkin from settling to the bottom. Pour into a mug and stir in approximately 1/2 cup of strong, hot coffee. Sprinkle with cinnamon. Delish- Enjoy!

To make the hot apple cider

What you need:

3 tablespoons pumpkin spice syrup, plus extra to drizzle on top
8 ounces, liquid apple cider, or enough to fill your mug
whipped cream to garnish.

What you do:

Heat 3 tablespoons of pumpkin spice syrup in a large mug. Mix in hot apple cider and top with whipped cream. Drizzle with additional syrup. Sprinkle with cinnamon (optional). It’s yummy- Enjoy

What we learned–  Avoid filling mug to the very top before adding whipped cream. It will melt over the top of your mug and erupt like a volcano.
